The lemon reduces the amount you can taste of the tequila or prevent you from tasting the tequila. The reason it was done is that historically tequila was usually a very cheap, poorly made, bad tasting spirit, and you drank it to get drunk, not for flavor. This has changed a great deal, and now its quite easy to find exquisite sipping tequila.
I like tequila and I like to have it straight up so that I can feel the complexities of the spirit and appreciate the unadulterated. To me, fine tequila or mezcal should be sipped and savored. Like you do for a single malt or cognac, It speak for itself. Lemon just masks the raw flavor of poorly made tequila but sometimes it’s fun to follow traditions.
