I think the best advice I could give you is to start with dishes and ingredients you love. Getting rid of meat doesn’t mean that you’re no longer going to be eating delicious meals, you just have to replace the savory umami flavor that you’re used to getting from meat to plant-based sources. Not to worry, there are tons of plant-based ingredients that are really rich in this umami flavor, they include mushrooms, eggplants, soy sauce, sun-dried tomatoes, and roasted nuts. If you stick to dishes you love, with ingredients you already like and you add some of the savory umami ingredients, then enjoying the start of your vegan diet should be no problem.
I would recommend you join some facebook groups and search instagram and pinterest for #veganbreakfast #veganlunch #vegandinner #veganrecipe and see what appeals to you. YouTube also has lots of videos. If you are trying to lose weight and/or improve your health then I recommend that you search for #plantbased – you will find whole foods, no oil recipes that are vegan. You also should try to find a support group online or a vegan friend nearby to help with your meal planning. Good luck!
