Should I accept a senior role that doesn’t pay as well as it should or I should do a junior role that pays exceptionally well for it’s level
should I work a senior role with less than usual pay or a junior role with really good pay?

A senior role definitely comes with the benefits that a junior role would and you should weigh the responsibilities attached to both, which seems fair? If you work a junior role well and you have the capacity to work in a senior role, then you just might be promoted to that senior role.
you should settle for the one that seems like the best option to you, considering your job description, work load and deliverables, also what benefits are attached to both these roles? How do they look on your resume? what is your long term goal? It is not the title that matters but your aim in the long-term
