I’m prepping to train my own psychiatric service dog. A lot of it so far has involved talking to the breeder for but I guess I’m going to go with him (well, till I have a change of mind). The first thing you may do is to find service dog trainers in your area, know and get familiar with the state regulations, and learning everything you can from them. For the most part, you’re going to have incredible help with the breeders.
Training a dog is very complicated. I train dogs as a profession and I still sometimes need help to train service dogs. My advice would be to stick with a trainer early and often; the first 4-6 months of life is the most critical time for socialization, meet new faces (animals and humans) and developing good habits. It is much easier and cheaper to prevent problems than to fix them. Aside from that for me it was all about being able to take advice and constructive criticism, to learn from others more experienced than myself, and having a thick skin cause there are a lot of haters in the dog world and even more in service dog world.
