I’ve recently started having strange allergies to foods I used to enjoy eating. What is the reason for the new allergies development?

There are things that I am allergic to that I didn’t use to be and there are things that I can have now that I used to be allergic to. My doctor said our bodies constantly chase as we get older, our allergies can change. I can have shellfish now. I found out about four moths ago that I am no longer allergic to it. However I do have to introduce it to my taste buds which haven’t really been liking shellfish!!
