You can marry whoever you want. Religion is a personal path. The choice is not really up to you tho, it’s up to her since it’s her religion that permits marriage of Muslim with a non Muslim. Hindus don’t generally request conversion, but Muslims most definitely do, as you have already seen in your reply. In reality I know of about 4 couples who have married Muslim women. They are very happy and no one converted because each person saw the other as a human being and loved them for who they were. The children are brought up learning about all beliefs.
In Islam it is compulsory to marry a Muslim irrespective of the gender. If a Hindu boy wants to marry a Muslim girl the general thing done is , the boy is asked to learn Islam and if he is satisfied with the relegion he must accept it and then the legal marriage takes place. But Islam hates forced conversions. Only when the boy accepts the relegion from his whole heart the marriage can take place.
