No matter how much I eat before bed, I always wake up with panging hunger pains, what is this? my appetite has never been like this.

this could be as a result of the high metabolism your body has, it is normal for our bodies to develop and grow so if you did not experience high metabolism rates before and now you do, it is all a part of growth, try to have some sort of snack ready available for when you wake because hunger pangs can lead to ulcer and that is difficult to manage
when you eat food high in sugar or calorie content in general, before you to bed, it will digest really fast and when you wake up you feel empty, hence the hunger, a lot of people experience this but you mentioned having appetite trouble, I am pretty sure nothing is wrong you just need to eat and avoid ulcer by all costs
