Japan has low obesity rates because the traditional culture doesn’t encourage overeating on large portions of calorie-dense foods. That’s all. By the way, I remember reading that most Japanese kids participate in preparing their school lunches and learn about healthy nutrition and kitchen tasks that way.
The Japanese eat mostly starch and protein. Also the Japanese eat very little fructose containing sugars so they have that going for them. Fructose is metabolized very similar to alcohol by the liver and leads to fatty liver disease which is the start of the metabolic issues that lead to obesity. In the same vein, the traditional diet is also low in fructose containing sugars.
