Depends on how drunk you were. If you remember fragments means you were not drunk enough. Let’s focus here on the situation when you do not recall anything. Called blackout. Up from a certain point in time you do not recall what happened, how you got home, what you did at home. From what you are told by the assistance, you lost your anxiety or shyness, you had challenges to move and speak properly.
I strongly believe that at that level of alcohol there is a disconnect between short term memory and long term memory. Short term memory works pretty much. At that time, you are able to have a conversation and recall other memories, you can order further drinks, pay, and get the change, you can order a taxi. So everything that is on auto-pilot, habits seems to function properly. With the caveat of impaired speech and movement though. What seems is happening when the level of alcohol in blood reach a certain threshold is that the disconnect between short term and long term memory is there and is profound. From my personal research on the very few studies available on the matter is that you will not be able to recall, even under hypnosis.
