I had a recycling project in honor of the world earth day, in which I requested for individuals who has interest should volunteer to help out. At the end of the project, some of the volunteers insisted on getting paid. I didn’t know what to do.

Volunteers are generally not paid as it is not a job offer, they’re signing up to get involved in a project from their own freewill. You may get a living stipend in some cases depending on your role, the skills you bring and the organization’s capacity to compensate you.
Volunteers do not get paid, they’re not rendering a paid service. They’re rendering a free service to humanity, to their community. Call it giving back to the society, if you must. From the meaning of the word “volunteer”, self-will is key.
