There are many health and nutritional risks associated with eating raw eggs. One would be the risk of getting infected by microbes for example some species of salmonella. Second, raw eggs contain high levels of avidin, an antinutrient that binds biotin (vitamin B7), which is rich in eggs, from being used in our body. Therefore, long term consumption of raw eggs may cause us biotin deficiency whose symptoms may include both physical and psychological. This antinutrient can largely be rid of in cooking/heating process.

The two are not to be used in place of another because they’re two different kinds of people entirely. Vegans don’t eat anykind of animal originated product. This includes all kinds of meat, fish, milk, eggs and, in some cases, honey. They also do not use leather goods wherever possible. A vegan will not buy a car with leather seats. There is some argument about if being vegan is just about consumption. Some say a vegan has to be actively into animal rights. I think that is a seperate thing and can be counter productive as there are vegans who are environmentally driven, not animal cruelty driven.
A vegetarian does consume milk products and, outside of India and similar countries, eggs. Vegetarians do not eat fish! Those that do are piscatarians and can make the life of other vegetarians more difficult.
