Having worked at a few family owned restaurants, I can say that most restaurants get rid of foods at the end of the night, but will refrigerate any baked dishes, soups etc. Depending on how good, in other news, it was sometimes the leftover food becomes staff dinner as well. Deserts, dips and sauces can be left in the fridge for days. Restaurants wouldn’t want to serve left over or stale meals to customers because they fear bad reviews. Those are bad for business.

  2. Once food expires from the timer, or if there is leftover food at the end night, it all gets counted then thrown away. Even if the food is still edible, it’s more of a safety risk to give it out so we end up just trashing it. Some restaurants refrain from donating their uneaten food out of fear that they will be sued if someone who eats it gets sick
